Meat and Veggie Rosemary Skewers

Ingredients
  

  • cooking spray
  • 1/2- 1 lb boneless skinless meat cut into 1" cubes
  • 1-2 pkg Mariposa Farms Rosemary skewers
  • 1 small zucchini cut into 1/2" thick wedges
  • 1 small summer squash cut into 1/2" thick wedges
  • 1 large red onion cut into 1/2" thick wedges
  • 24 cherry tomatoes
  • 24 mushrooms
  • 1 small red bell pepper cut into 1" chunks
  • 1 small yellow bell pepper cut into 1" chunks
  • 1/2 cup Italian salad dressing Or any variety marinade you desire

Instructions
 

  • Light the grill and season the grilling pan.
  • In a large bowl, combine the meat, zucchini , summer squash, onion, peppers,tomatoes, mushrooms and dressing or marinade; toss to coat. Slide on the skewer in any order combination the meat and veggies and place them on the grilling pan.
  • Grill on medium-high for 10-15 minutes, or until the meat is cooked through when checked with a digital read thermometer.
