Spray a large piece of aluminum foil with non stick spray. Brush the fish fillets with oil and season with salt and pepper. Place the fillets on the foil and fold into a foil pack to seal. Place on the grill and cook for 6-8 minutes. Fish should be white and flaky when done.
Basil Pesto Sauce
Pick the leaves off the basil and place in food processor with the garlic, pine nuts, parmesan cheese and olive oil. Pulse or grind until mixture turns into a sauce. Add salt and pepper to taste.
Place the fish fillets on a serving plate on a bed of basil pesto sauce, top with chopped parsley before serving.
