Grilled Fish with Basil Pesto Sauce

Ingredients
  

  • 2 white fish fillets
  • 1 tbsp olive oil
  • salt and pepper
  • 2 tbsp fresh Mariposa Farms parsley chopped

Basil Pesto Sauce

  • 1 pkg fresh Mariposa Farms Basil
  • 2 cloves garlic peeled
  • 1 tbsp pine nuts
  • 1 tbsp parmesan cheese grated
  • 1 cup extra-virgin olive oil

Instructions
 

  • Preheat the grill to a medium-high temperature.
  • Spray a large piece of aluminum foil with non stick spray. Brush the fish fillets with oil and season with salt and pepper. Place the fillets on the foil and fold into a foil pack to seal. Place on the grill and cook for 6-8 minutes. Fish should be white and flaky when done.

Basil Pesto Sauce

  • Pick the leaves off the basil and place in food processor with the garlic, pine nuts, parmesan cheese and olive oil. Pulse or grind until mixture turns into a sauce. Add salt and pepper to taste.
  • Place the fish fillets on a serving plate on a bed of basil pesto sauce, top with chopped parsley before serving.
