Grilled Fish with Basil Pesto Sauce
Ingredients
- 2 white fish fillets
- 1 tbsp olive oil
- salt and pepper
- 2 tbsp fresh Mariposa Farms parsley chopped
Basil Pesto Sauce
- 1 pkg fresh Mariposa Farms Basil
- 2 cloves garlic peeled
- 1 tbsp pine nuts
- 1 tbsp parmesan cheese grated
- 1 cup extra-virgin olive oil
Instructions
- Preheat the grill to a medium-high temperature.
- Spray a large piece of aluminum foil with non stick spray. Brush the fish fillets with oil and season with salt and pepper. Place the fillets on the foil and fold into a foil pack to seal. Place on the grill and cook for 6-8 minutes. Fish should be white and flaky when done.
Basil Pesto Sauce
- Pick the leaves off the basil and place in food processor with the garlic, pine nuts, parmesan cheese and olive oil. Pulse or grind until mixture turns into a sauce. Add salt and pepper to taste.
- Place the fish fillets on a serving plate on a bed of basil pesto sauce, top with chopped parsley before serving.
