Zucchini with Garlic and Oregano

To add a splash of color, try using half zucchini and half summer squash.

  • 2 cloves garlic peeled and minced
  • 2 tbsp canola oil
  • 4 medium zucchini sliced
  • 3 tsp fresh Mariposa Farms Oregano finely chopped
  • 1/2 tsp salt
  • 1/8 tsp pepper


  • In a large skillet, saute the garlic in oil over medium heat for 1 minute. Add the zucchini, oregano, salt and pepper. Cook and stir for 5-7 minutes or until zucchini is crisp tender.
