Carrots Glazed with Lemon, Honey and Thyme

  • 1 lb carrot chips rinsed
  • 1/2 cup broth chicken or vegetable
  • 1 tbsp honey
  • 1/2 tsp Cookies Flavor Enhancer divided
  • 1 tbsp butter
  • 1/2 tsp Mariposa Farms Fresh Thyme rinsed and leaves removed from stems
  • 3-4 sprigs Mariposa Farms Fresh Thyme rinse and use for garnish
  • 2 tbsp honey
  • 2 tsp lemon juice
  • 1 tsp lemon zest


  • Place the carrots, broth, 1 tbsp honey and 1/4 tsp of the Cookies Flavor Enhancer in a large skillet over medium high heat and bring to a boil. Reduce heat to medium and cover, simmer for 4-6 minutes, stirring occasionally. Carrots should be almost tender when poked with a sharp knife.
  • Uncover the pan and increase the heat to high, bringing it to a rapid simmer. Cook stirring occasionally to reduce the liquid to just a couple of tablespoons.
  • Add the butter, 2 tbsp of honey, 1 tsp lemon zest, and the thyme leaves, toss until the butter is melted and the carrots are coated. Cook for 2-3 more minutes, stirring frequently, until the carrots are completely tender and are light golden brown.
  • Remove the skillet from the heat, stir in the lemon juice and the rest of the Cookies Flavor Enhancer. Garnish with the thyme sprigs. Serve at once, spoon the glaze over the individual servings if desired.
