Tomato Basil Soup
Not quite the soup that Grandma made, it's better!
Ingredients
- 2 tbsp green onion chopped
- 2 tsp minced garlic
- 1 1/2 tsp olive oil
- 28 ounces crushed tomatoes
- 10 ounces condensed chicken broth do not dilute
- 1 1/4 cup water
- 1/4 tsp ground pepper
- 3/4 cup heavy cream
- 2 tbsp Mariposa Farms Fresh Basil chopped
- 2 tsp sugar
- shredded parmesan optional
- sour cream optional
Instructions
- Put olive oil in large sauce pan. Sauté onion and garlic until tender. Add tomatoes, pepper, water and broth. Bring to a boil, reduce heat and simmer for approximately 10 minutes.
- Add the cream, basil and sugar. Mix well. Cook until heated through. Do not boil.
- Serve with shredded parmesan and/or sour cream if desired.
