Roasted Pork Tenderloin

Servings 8 servings


  • 2-3 lb pork tenderloin
  • 2 cloves garlic peeled and minced
  • 2 tbsp Mariposa Farms Fresh Rosemary rinsed and chopped leaves
  • 2-4 sprigs Mariposa Farms Fresh Rosemary for garnish
  • 1 tsp ground cumin
  • 2 tsp Cookies Flavor Enhancer
  • 4-6 tbsp olive oil


  • Preheat oven to 425 degrees F. Mix garlic, rosemary, cumin, cookies flavor enhancer and rub the mixture all over the pork.
  • Heat the oil in a large cast iron skillet over high heat. Add the pork and cook, turning as necessary. You want to sear the outside of the pork tenderloin, this should take roughly 4-6 minutes.
  • Place the skillet in the oven and roast until the internal temperature is: 145 for medium rare with a rest time of 3 minutes, or 150 for medium with a rest time of 10 minutes.
  • Remove from oven when it reaches the desired temperature. After allowing the meat to rest, slice, and place on serving platter. Garnish with fresh rosemary sprigs, serve and enjoy.
