Roasted Acorn Squash with Herbs and Parmesan Cheese

To change up the flavor of this dish try changing the herb; thyme, sage, marjoram, tarragon, rosemary or oregano.

  • 2 medium sized acorn squash
  • 1/3 cup parmesan cheese
  • 3 tbsp Mariposa Farms Fresh Thyme rinsed and leaves removed from stems
  • 1 tbsp butter melted
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt possibly more to taste
  • 1/8 tsp black pepper possibly more to taste


  • Preheat oven to 425 degrees F.
  • Cut the acorn squash in half and scoop out the seeds and stringy stuff. Then slice each half into 1/2 inch slices. In a large bowl combine all of the ingredients and mix well. Add the slices of squash and toss to coat evenly. Place the squash slices on a large sheet pan.
  • Bake in the oven for 15-20 minutes or until the squash is cooked through and the cheese is crispy and lightly browned.
