Roasted Acorn Squash with Herbs and Parmesan Cheese
To change up the flavor of this dish try changing the herb; thyme, sage, marjoram, tarragon, rosemary or oregano.

  1. Preheat oven to 425 degrees F.
  2. Cut the acorn squash in half and scoop out the seeds and stringy stuff. Then slice each half into 1/2 inch slices. In a large bowl combine all of the ingredients and mix well. Add the slices of squash and toss to coat evenly. Place the squash slices on a large sheet pan.
  3. Bake in the oven for 15-20 minutes or until the squash is cooked through and the cheese is crispy and lightly browned.
