Roasted Acorn Squash with Herbs and Parmesan Cheese
To change up the flavor of this dish try changing the herb; thyme, sage, marjoram, tarragon, rosemary or oregano.

- 2 medium sized acorn squash
- 1/3 cup parmesan cheese
- 3 tbsp Mariposa Farms Fresh Thyme rinsed and leaves removed from stems
- 1 tbsp butter melted
- 1/2 tsp garlic powder
- 1/4 tsp sea salt possibly more to taste
- 1/8 tsp black pepper possibly more to taste
Preheat oven to 425 degrees F.
Cut the acorn squash in half and scoop out the seeds and stringy stuff. Then slice each half into 1/2 inch slices. In a large bowl combine all of the ingredients and mix well. Add the slices of squash and toss to coat evenly. Place the squash slices on a large sheet pan.
Bake in the oven for 15-20 minutes or until the squash is cooked through and the cheese is crispy and lightly browned.
