- 5 1/2 lbs red potatoes cubed
- 1 1/4 cup dry white wine
- 6 tbsp red wine vinegar
- 4 tsp Dijon mustard
- 3 garlic cloves minced
- 1/4 cup olive oil
- 12 green onions chopped
- 1 red onion sliced
- 3/4 cup Mariposa Farms Fresh Italian Flat Parsley chopped
- 1/4 cup Mariposa Farms Fresh Baby Dill chopped
- 2 red bell peppers chopped, optional
- 3/4 cup sweet pickle slices optional
- Steam potatoes until tender.
- Transfer potatoes to a large bowl, pour wine over them and set aside.
- Mix next three ingredients in a small bowl, gradually whisk in oil.
- Pour over potatoes.
- Mix in remaining ingredients.
- Let stand 1 hour before serving.
