  • 3/4 cup butter
  • 2 1/2 tbsp grated lemon peel
  • 1 1/2 tbsp Mariposa Farms Fresh Sage
  • 12 trout or bluegill filets


  • Melt butter in a heavy saucepan over medium-low heat.
  • Remove from heat.
  • Add lemon and sage.
  • Season to taste with salt and pepper.
  • Brush entire fish with butter mixture.
  • Grill over medium-high heat about 4 minutes on each side or until just opaque in the center.
  • Serve with lemon wedges.
