Herbed Rice Pilaf

Very tasty pilaf to accompany a hearty main dish.

  • 1/2 cup Mariposa Farms Fresh Basil
  • 2 tbsp Mariposa Farms Fresh Thyme
  • 1 small bunch green onions
  • 2 tbsp oil
  • 3/4 cup long-grain rice uncooked
  • 2 1/2 cup boiling water
  • 2 tbsp butter


  • Finely Chop green onions and all of the fresh herbs.
  • Heat oil in a heavy saucepan and add butter.
  • When foamy, add rice and cook over moderate heat for 2 minutes, stirring constantly.
  • When rice turns opaque add water, salt and pepper. Bring to a boil.
  • Cover and simmer on low heat gently without stirring 20 minutes or until liquid is absorbed and rice is tender.
  • Add the chopped herbs and onions.
  • Cover and let stand for 5 minutes before serving.
