In a medium sized bowl combine the mayonnaise, lime juice, cilantro, thyme, garlic, pepper flakes, parmesan cheese and the crushed bread crumbs. Mix well.
Place pork loin slices in a baking dish. Equally divide the mixture and place a top each of the pork loin slices, spread to cover the entire top of each.
Place pan in oven and bake uncovered for 10-20 minutes, depending on the thickness of the pork loin slices. When done, remove from oven and allow to rest before serving.
