Herb Crusted Pork Loin Slices

Servings 4 servings


  • 4 6-8 oz Pork Loin Slices
  • 3/4 cup mayonnaise
  • 2 tbsp lime juice
  • 2 tbsp Mariposa Farms Cilantro washed and chopped (Optional)
  • 1/2-1 tbsp Mariposa Farms Fresh Thyme washed leaves
  • 1-2 cloves garlic peeled and finely chopped
  • 1/2 - 1 tsp Mariposa Farms Dried Chipotle Peppers finely crushed/ flaked to taste (Optional)
  • 1/4 cup parmesan cheese
  • 4 tbsp Italian seasoned dry bread crumbs crushed


  • Preheat oven to 425 degrees F.
  • In a medium sized bowl combine the mayonnaise, lime juice, cilantro, thyme, garlic, pepper flakes, parmesan cheese and the crushed bread crumbs. Mix well.
  • Place pork loin slices in a baking dish. Equally divide the mixture and place a top each of the pork loin slices, spread to cover the entire top of each.
  • Place pan in oven and bake uncovered for 10-20 minutes, depending on the thickness of the pork loin slices. When done, remove from oven and allow to rest before serving.
