Crock-pot Lemon Thyme and Butter Carrots
Ingredients
- 2 lbs carrots cut into french fries style slices
- 1 small yellow onion diced
- 1/4 cup unsalted butter
- 3 tbsp fresh Mariposa Farms Lemon Thyme leaves (You'll need some for garnish as well)
- 1 1/2 cup freshly squeezed lemon juice
- 1 1/2 tsp lemon zest
- 2 tsp brown sugar optional
- salt and pepper to taste
Instructions
- Add carrots and onions to crock pot (4 or 6 qt) Combine butter, lemon thyme, zest and lemon juice in a small bowl until thoroughly combined. Pour over carrots, season with salt and pepper.
- Cook on high for 3 hours, stirring every 45 minutes. Near end of cook time stir in 1-2 tsp of sugar depending on tartness of lemon juice (if desired). Garnish with additional lemon thyme (if desired) and serve.
