Braised Pork Loin Cutlets with Thyme-Lemon sauce

Preparation
  1. Place pork in a glass baking dish.
  2. Mix 2 tbsp lemon juice, thyme, lemon peel and garlic in a small bowl.
  3. Rub mixture over both sides of pork and let marinate for 2-24 hours.
Cooking
  1. Place chops on a baking sheet and sprinkle them lightly with flour, salt and pepper.
  2. Working in batches brown all pork in a skillet over medium skillet.
  3. Add milk and boil until pork is cooked though.
  4. Reconstitute the mushrooms and add to the sauce.
  5. When sauce has thickened slightly remove chops from skillet and place on a platter.
  6. Whisk lemon juice into sauce.
  7. Blend about 30 seconds then pour over pork.
