Ingredients
- 1/4 cup shallots minced
- 3 tbsp olive oil extra virgin
- 1 1/2 tbsp lemon juice
- 2 oranges large
- 1 red onion small, thinly sliced
- 7 cup Mariposa Farms Fresh Arugula trimmed
- 1 fennel bulb large, quartered, cored and chopped
- salt
- pepper

Instructions
- Whisk shallots, olive oil and lemon juice in a medium bowl.
- Cut all peel and white pith from oranges.
- With a small knife cut between membranes to release segments.
- Combine arugula, fennel and onion in a large bowl.
- Toss with dressing.
- Add orange segments.
- Season salad to taste with salt and pepper.
