Instructions
  1. Reconstitute mushrooms by soaking them in boiling water until they are soft.
  2. Preheat oven to 350.
  3. Saute mushrooms in olive oil about 7 minutes.
  4. Add butter, shallots, carrots and celery.
  5. Saute for 3 minutes.
  6. Add vermouth and bring to a boil.
  7. Add barley, thyme and hot broth, stir well.
  8. Transfer to a casserole and bake for 45 minutes.
