Arugula, Fennel and Orange Salad

Bright, tasty, fresh and all around a tasty dish.

  • 1/4 cup shallots minced
  • 3 tbsp olive oil extra virgin
  • 1 1/2 tbsp lemon juice
  • 2 oranges large
  • 1 red onion small, thinly sliced
  • 7 cup Mariposa Farms Fresh Arugula trimmed
  • 1 fennel bulb large, quartered, cored and chopped
  • salt
  • pepper


  • Whisk shallots, olive oil and lemon juice in a medium bowl.
  • Cut all peel and white pith from oranges.
  • With a small knife cut between membranes to release segments.
  • Combine arugula, fennel and onion in a large bowl.
  • Toss with dressing.
  • Add orange segments.
  • Season salad to taste with salt and pepper.
