Greek Salad with Zucchini Noodles
Ingredients
- 2 zucchini spiralized
- 10-15 grape tomatoes halved
- 10-15 kalamata olives pitted
- 1/4 cucumber diced
- 1/4 cup red onion thinly sliced or diced
- 3 oz feta cheese crumbled
- 2 tbsp olive oil extra virgin
- 2 tbsp lemon juice
- 3 tsp Mariposa Farms Fresh Oregano chopped
- salt and pepper to taste
Instructions
- In a large bowl add zucchini, tomatoes, onion, olives, cucumber and cheese. Mix slightly.
- Blend olive oil, oregano, lemon juice, salt and pepper until smooth. Pour over zucchini mixture and toss. Let set in refrigerator for 15 minutes and serve.
