Zucchini Pancakes

Change this recipe to fit your personal taste. For instance, us cheddar instead of Monterrey Jack cheese or chives instead of parsley.

  • 1 lb zucchini coarsely grated
  • 3 tsp Mariposa Farms Fresh Italian Flat Parsley minced
  • 1/2 cup shredded Monterrey Jack cheese
  • 1/2 cup flour
  • 2 eggs beaten
  • 4 tbsp butter
  • 1/2 cup grated parmesan cheese
  • salt & pepper to taste


  • Stir zucchini, parsley,cheese, salt, pepper and flour until blended. Add eggs and stir.
  • Heat butter over medium high heat in large skillet.
  • Drop zucchini mixture by spoonfuls into skillet. Cook until golden, turn over and brown. Sprinkle with parmesan cheese and serve.
