Zucchini Pancakes
Change this recipe to fit your personal taste. For instance, us cheddar instead of Monterrey Jack cheese or chives instead of parsley.
Ingredients
- 1 lb zucchini coarsely grated
- 3 tsp Mariposa Farms Fresh Italian Flat Parsley minced
- 1/2 cup shredded Monterrey Jack cheese
- 1/2 cup flour
- 2 eggs beaten
- 4 tbsp butter
- 1/2 cup grated parmesan cheese
- salt & pepper to taste
Instructions
- Stir zucchini, parsley,cheese, salt, pepper and flour until blended. Add eggs and stir.
- Heat butter over medium high heat in large skillet.
- Drop zucchini mixture by spoonfuls into skillet. Cook until golden, turn over and brown. Sprinkle with parmesan cheese and serve.
