Turkey Burgers with Spinach, Feta & Tzatziki
Ingredients
Burgers
- 1 cup frozen chopped spinach thawed
- 1 lb 93% lean ground turkey
- 1/2 cup feta cheese crumbled
- 1/2 tsp garlic powder
- 1 1/2 tsp Mariposa Farms Fresh Oregano finely chopped
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 4 tbsp tzatziki
- 12 slices cucumbers
- 8 thick rings red onion about 1/4 inch
- 4 small hamburger buns whole wheat is preferred
- 4-8 slices red tomatoes slices
Homemade Tzatiki
- 1 8 oz container plain Greek yogurt
- 1 squeeze Lemon
- 1 clove garlic finely minced
- 1 tbsp Mariposa Farms Fresh Baby Dill chopped
- 1/2 cup cucumber finely chopped or shredded
- salt and pepper to taste
Instructions
Homemade tzatziki
- Add a squeeze of lemon, dill, garlic and finely chopped cucumbers to an 8 oz container of greek yogurt, mix well. Add salt and pepper to taste if desired.
Burgers
- Preheat the grill to a medium high heat. Squeeze excess moisture from the spinach. In a medium bowl combine turkey, feta, garlic powder, oregano, salt and pepper and mix well. Make four 4-inch patties.
- Oil the grill grates. Grill the burgers until cooked thoroughly flipping half way through 4-6 minutes per side (an internal temperature of 165 degrees on an instant read thermometer).
- Place the buns on a serving platter, top each one with 1 dollop of tzatiki sauce, 3 cucumber slices, 2 onion rings and a tomato slice.
- These work great to make ahead of time, wrap individually and refrigerate up to 8 hours.
