Fruity Arugula Salad
Choose 2 or 3 fruit options when making this salad, change it up each time for a new spin of flavor.
Ingredients
Dressing
- 2 tsp shallots or red onion finely minced
- 2 tsp Dijon mustard
- 2 tsp red wine vinegar
- 1/4 tsp salt
- 1 tbsp orange marmalade
- 2 tbsp orange juice
- 1 tsp fresh orange zest
- 2 tbsp olive oil
- pepper to taste
Salad
- 1/2 lb fresh Mariposa Farms Arugula
- 3 small oranges, cuties or halos peeled and seperated
- 1/4 cup pomegranate arils
- 1/4 cup fresh blueberries
- 1/4 cup fresh strawberries sliced
- 1/4 cup melon any variety, made into balls
- 1/4 cup walnuts toasted (optional)
- 1/4 cup slivered almonds toasted (optional)
- 1/4 cup cashews
- 1/4 cup maple roasted pecans
Instructions
- In a small bowl, add the finely chopped red onion or shallot and vinegar. Marinade for 8-12 minutes to mellow the flavor of the onion.
- To the marinade mixture add the mustard, salt, marmalade, orange juice, and orange zest. Whisk to combine all ingredients, slowly add the oil. When the mixture has formed an emulsion, taste it and add additional salt and pepper to taste.
- Divide the arugula between your salad plates, add your fruit choices and nuts. Lightly drizzle the dressing over the salad, sprinkle with course salt and cracked pepper and serve immediately.
