Remove the chicken from its container and rinse inside and outside. Pat dry and set aside.
Mix your spices and herbs together in a small bowl and rub down the outside with the mixture. Stuff the cavity of the chicken with the sprigs of the herbs, slices of lemon and onion.
Place the chicken in a roaster pan and cover. Cook on low for 8-10 hours or until an instant read thermometer reads 180 degrees F.
