Mix it up Chicken & Basil Stir-Fry

To mix up the flavor of this dish, try using Mariposa Farms Fresh Thai Basil or Opal Basil.

Ingredients
  

  • 1 lb boneless, skinless chicken breast
  • 1/4 cup red bell peppers thinly sliced
  • 1/4 cup yellow onion thinly sliced and quartered (optional)
  • 1/4 cup tomato slices sliced and quartered (remove seed pockets)
  • 2 tbsp olive oil
  • 2 cloves garlic peeled and minced
  • 1 tbsp ginger minced
  • 1/4 tsp Mariposa Farms Dehydrated Chipolte Peppers crushed/flaked
  • 1 cup chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp corn starch
  • 2 pkgs Mariposa Farms Fresh Basil 3 cups lightly packed leaves (rinsed)
  • salt to taste

Instructions
 

  • Rinse the chicken and pat dry with a paper towel. Cut into 1/4" thick strips approximately 2" long.
  • Place a large nonstick skillet over high heat ( you can also use a wok). When the pan is hot add the oil, garlic, ginger, chipolte flakes, onions, bell peppers, tomatoes, stir and add chicken. Stir frequently until chicken is no longer pink, test the center to be sure. This should take about 3-5 minutes.
  • In a small bowl combine broth, soy sauce, and cornstarch until smooth. Add to the pan and stir until boiling, usually about one minute. Add the basil and stir until just starting to wilt, less than 30 seconds. Add salt if desired and pour into serving bowl.
  • Serve this over any variety of hot cooked rice or noodles.
