Ingredients

zucchini
coarsely grated

Mariposa Farms Fresh Italian Flat Parsley
minced
1/2
cup
shredded Monterrey Jack cheese
1/2
cup
flour
2
eggs
beaten

tbsp
butter
1/2
cup
grated parmesan cheese
salt & pepper to taste
Instructions
Stir zucchini, parsley,cheese, salt, pepper and flour until blended. Add eggs and stir.
Heat butter over medium high heat in large skillet.
Drop zucchini mixture by spoonfuls into skillet. Cook until golden, turn over and brown. Sprinkle with parmesan cheese and serve.
