Zucchini Pancakes
Change this recipe to fit your personal taste. For instance, us cheddar instead of Monterrey Jack cheese or chives instead of parsley.

Instructions
  1. Stir zucchini, parsley,cheese, salt, pepper and flour until blended. Add eggs and stir.
  2. Heat butter over medium high heat in large skillet.
  3. Drop zucchini mixture by spoonfuls into skillet. Cook until golden, turn over and brown. Sprinkle with parmesan cheese and serve.
