Herbed Rice Pilaf
Very tasty pilaf to accompany a hearty main dish.

  1. Finely Chop green onions and all of the fresh herbs.
  2. Heat oil in a heavy saucepan and add butter.
  3. When foamy, add rice and cook over moderate heat for 2 minutes, stirring constantly.
  4. When rice turns opaque add water, salt and pepper. Bring to a boil.
  5. Cover and simmer on low heat gently without stirring 20 minutes or until liquid is absorbed and rice is tender.
  6. Add the chopped herbs and onions.
  7. Cover and let stand for 5 minutes before serving.
