Ingredients
- 4 zucchini medium size, trimmed, halved lengthwise
- 4 yellow squash medium size, trimmed, halved lengthwise
- 5 tbsp olive oil
- 1/2 cup Mariposa Farms Fresh Basil chopped
- 1/3 cup fresh parmesan
- 2 tbsp balsamic vinegar
- 1/4 cup cherry or grape tomatoes halved
- 1/4 cup red onions chopped

Instructions
- Place squash on a baking sheet.
- Brush with 3 tbs. olive oil.
- Grill over medium heat till golden brown, turning occasionally.
- Cut vegetables into 1 inch pieces and toss with remaining ingredients.
- Salt and pepper to taste.
