  1. In a large bowl add zucchini, tomatoes, onion, olives, cucumber and cheese. Mix slightly.
  2. Blend olive oil, oregano, lemon juice, salt and pepper until smooth. Pour over zucchini mixture and toss. Let set in refrigerator for 15 minutes and serve.
