Out with the old, in with the new! Try something new this New Year’s Eve with some fun and tasty treats using our Mariposa Farms herbs. No matter if you are a ‘party animal’ or a ‘go to bed by ten and sleep through midnight’ type of person, you can enjoy these recipes. I am the latter, but I still enjoy a small celebration with my husband on New Year’s Eve. We might order in and watch a movie or (our favorite) make a bunch of different appetizers and munch and sip drinks until we get tired and turn in.

Champagne Cocktail with Fruit and Rosemary

  1. Make a simple syrup with the rosemary by bringing water and honey to a boil in a saucepan. Stir until honey is dissolved. Remove from heat and add one sprig of the rosemary. Let set for 2-2 1/2 hours. Remove rosemary and refrigerate until ready to mix drink.
  2. To make the drink - mix 1 ounce of the simple syrup and 1 oz of the fruit puree in a champagne glass. Top with champagne. Garnish with rosemary if desired and serve.

Sausage Stuffed Mushrooms

  1. Rinse and dry mushrooms, remove the stem from the cap. Chop stems and reserve for later.
  2. In a large skillet heat 1 tbsp of olive oil over medium heat. Add garlic and onion and saute until onions are translucent. Stirring constantly.
  3. Add mushroom stems and saute for 2 minutes. Add sausage and spinach. Cook for 1 minute. Add bread crumbs (reserving some for topping). Cook for 2 minutes.
  4. Remove from heat and add basil, parsley, Parmesan, mozzarella, salt and pepper. Stir to combine.
  5. Coat each mushroom cap with olive oil and season with salt and pepper. Put about 2 tbsp of the filling in each mushroom cap.
  6. Prepare a foil lined, oil coated, baking sheet. Spread out rosemary and thyme on top of the oil coated baking sheet. Place stuffed mushrooms on top of rosemary and thyme. Sprinkle with remaining bread crumbs.
  7. Broil in oven on lowest rack position for 10 minutes or until mushrooms are tender and tops are golden brown.

Raspberry Peach Cooler

  1. In a small saucepan, bring sugar and water to a boil. Stir occasionally until the sugar is completely dissolved. Add the peaches to the sugar mixture and transfer to a sealable container. Refrigerate for 5 hours (or more)
  2. Strain peach mixture through a fine strainer over a medium bowl. Discard the peaches. Add half of the raspberries and lemon thyme sprigs. Gently mash berries with the back of a spoon so that they begin to juice. Pour into a pitcher through a fine strainer. Press through the strainer then discard the contents left in the strainer.
  3. Add club soda to the pitcher with juice mixture and stir until combined.
  4. Gently crush the remaining lemon thyme sprigs. Pour the juice mixture over ice into glasses and garnish with the remaining raspberries, lemon thyme and lime slice.

Herb Cream Cheese Spread

  1. Blend cream cheese and sour cream until smooth. Add remaining ingredients and mix well. Cover and chill through. Serve with crackers, fresh vegetables, chips or bread sticks.

Experiment with different milks, chocolates and herbs to get your favorite combination.

  1. Mix your herbs and milk in a saucepan. Heat until warmed through but not boiling. Remove from heat, cover, and let steep for 10-15 minutes
  2. Strain milk mixture and add milk back to saucepan. Add the chocolate. Heat until chocolate is melted, stirring constantly. Do not boil
  3. Served topped with marshmallows, whipped cream and/or chocolate shavings.

Flower Ice
Use a variety of flowers and shaped ice molds for a beautiful pop of color and a little whimsy in your drinks and ice buckets!

  1. Place edible flowers into ice cube trays. Fill with distilled water and freeze.
  2. Add to any drink or use in ice buckets.
